Baking Frenzy

It is definitely that time of year again, where the bakers go crazy!  If I don’t gain 20 lbs. between Thanksgiving and Christmas it will be a miracle.  Thanksgiving started with a Chocolate Pecan Pie, then it was pumpkin chocolate chip cookies and chocolate chip banana bread, which are shown below.

Pumpkin Chocolate Chip Cookies – I got this recipe from Joy The Baker and it can be found here: Pumpkin Chocolate Chip Cookies.


DSC_0173Combine the dry ingredients (flour, salt, baking soda, baking powder, cinnamon, nutmeg, cloves).


To the sugar, add the wet ingredients (eggs, oil, pumpkin & vanilla).


Combine the dry ingredients to the wet.


Add in the chocolate chips!


Bake in oven and out comes cake-like pumpkin cookies.  I enjoyed them, as well as my German class but Christian didn’t like them.  He prefers savory pumpkin dishes compared to sweet!  I guess everyone has their own opinion. Smile

Chocolate Chip Banana Bread – Now this is a recipe that Christian asked me to make.  As I wanted to make every type of pumpkin dessert known to man, he requested that I take a break from the pumpkin and make him his favorite, banana bread with chocolate chips.  I choose a recipe from the Food Network (of course): Banana Bread and added chocolate chips to it and doubled the recipe.


Mash bananas in a separate bowl and add milk and cinnamon.


Combine dry ingredients (flour, salt, baking soda & baking powder).


Combine sugar, eggs & butter and mix.


Add in the banana mixture & then the flour mixture.


Add the chocolate chips.  Pour mixture into greased baking pans.
