We have been lazy in the last week or so. This is partly due to the fact that I got some sort of stomach bug last week, felt better and then over the weekend didn’t feel so great again. Christian also got a cold that he couldn’t seem to shake. We barely left the house over the weekend, except to run a few errands and go to church. It was such a pity too because Sunday was a beautiful sunny day. Well, when you aren’t feeling well, what is better than some soup! This time Christian made tomato. I don’t know what recipe Christian used, so you will have to just enjoy the pictures & my not so technical description of the soup making process.
Ingredients: lots of tomatoes, onions, garlic, rosemary, thyme, tomato paste, vegetable broth, basil, marjoram, salt & pepper
Cook chopped onions & garlic.
Add chopped tomatoes.
Add the herbs & other seasonings.
Add vegetable broth.
Work the immersion blender.
Add a little tomato paste.
Christian put on his apron before things got a little messy.
Straining the soup.
Serve.
