Christian’s birthday was at the beginning of May. He was on a business trip and arrived home on the morning of his birthday. We celebrated with cake and presents.
I made this Raspberry Chocolate Chip Layer Cake from this website. I have used a lot of her recipes and they are always so good! I used frozen raspberries for the cake filling but used strawberries on top, since fresh raspberries aren’t at the grocery stores right now.
Christian was excited to open up his presents!
He received a bunch of new dress shirts. I ordered them from a company that my brother and dad use for shirts. Unfortunately, I got the sizing wrong, so we had to send them back but we ordered new ones in hopefully the correct size.
Another one of his gifts was a waffle iron. We had been talking about wanting to make waffles and Christian had one picked out to buy but we never did until his birthday! I decided that his birthday dinner was going to chicken and waffles. It is a southern US dish and we had them for the first time when we were in Denver in February. I looked up recipes for chicken and found one for buttermilk cornflake chicken. It sounds crazy but I changed it up a bit. I bought chicken breasts and marinated them for a couple hours in buttermilk with a spice mix called Red Rocks Hickory Smoke Seasoning from the Savory Spice Shop in Denver. It consists of hickory smoke salt, paprika, roasted garlic & onion, pepper and oregano. Then when we were ready to eat, I dipped the chicken breasts in crushed Special K cereal and then baked them in the oven until they were cooked through.
The smoky chicken with the sweetness of the waffles and maple syrup was so, so good! Just thinking about it makes me want to make this again. Christian enjoyed it as well & we have been making waffles for breakfast the past couple of weekends.
